MY SPINACH CHICKEN QUICHE
INGREDIENTS:
4 Chicken Breasts
1 Small Onion
8 oz. Mushrooms (chopped)
12 oz. Frozen Chopped Spinach
16-18 oz. Swiss Cheese
8 to 12 Eggs (beaten)
Salt and Pepper to taste
1/8 tsp. Nutmeg
1 Sriracha Hot Sauce (or to taste)
2 Unbaked Deep Dish Pie Shells
DIRECTIONS:
Cut chicken in small bite size pieces. In a medium skillet add a little olive oil; add onions, mushrooms and chicken brown and season anyway you like (I use salt, pepper, and garlic) chicken does not have to be cooked all the way through, set aside to cool. (Too cool fast spread out chicken mixture on a cookie sheet and place in freezer.) Cook spinach according to package instructions and drain all the liquid out; set aside and cool. In a large bowl add grated cheese, eggs, spinach, Sriracha, salt and pepper and beat together well. Add the chicken mixture and spinach to the egg mixture and combine. Pour into two unbaked pie shells. Bake at 350ºF degrees for 60 minutes or until egg is set. Let rest 15 minutes before serving.
